Kevin discovered sourdough while living in Prague, where a neighborhood bakery turned a daily errand into an obsession. Back home and unable to find bread like it, he learned to make it himself — starting, as most people do, with a string of dense, flat failures. Figuring out why turned into years of study: fermentation, timing, and the kind of knowledge that lives in your hands. He teaches sourdough to people who have never baked anything, built on three ideas: feed your starter before you bake, not on a schedule; fit the bread into your life instead of the other way around; and learn to read your dough.
