The Winter Solstice

Well, it’s happened again. We have made it to the shortest day of the year. The Winter Solstice is always a little bitter sweet. Of course we welcome the slow return of more daylight hours to our lives but it always seems that the sluggishness of winter has finally descended onto life on the farm when the Solstice arrives to pick up the pace again. We expect the greens in the greenhouse to start growing with growth of daylight hours. Tractor repairs, crop plans and seed orders start to push soup making and knitting off the top of the list. But before all of that we will enjoy our darkest day, make a fire, and celebrate the great the rest that is winter. Luckily for all of us, the day is not marked by panic of realizing shortness in our winter stores. We have a great CSA Share to celebrate the day and we can’t wait to see you all!

Sweet Watermelon Radish Salad

1 large watermelon radish, sliced as thinly as possible
1 small white onion, also sliced thin
1/3 cup orange juice
2 Tbsp extra virgin olive oil
1/2 tsp sea salt
1/2 tsp pepper (fresh ground)
2 Tbsp apple cider vinegar

Slice your onion and radish. Place in a large mixing bowl. Add the remaining ingredients to the mixing bowl - toss well. Place in refrigerator to chill overnight. 30 minutes before eating, remove from fridge and allow to come to room temperature, and enjoy!
